From April’s Kitchen

Apple Streusel Muffins

1 1/2 cups flour           1/2 cup milk

1 cup sugar                  1/2 cup melted butter

2 tsp baking powder    2 eggs – beaten lightly

1 tsp baking soda        1/2 cup raisings or nuts

1/4 tsp salt

1 medium apples, peeled and cubed

In large bowl mix flour, sugar, baking powder, baking soda and salt.  Add apples and raisings or nuts to coat in flour

In separate bowl mix mild, eggs and melted butter.  Add to flour mixture but only mix to combine all ingredients.  DO NOT overmix.

Spoon into muffin tins lined with muffin papers.

STREUSEL –   1/2 cup flour

1/2 cup coconut

1/3 cup brown sugar

1 tsp cinnamon

1/4 cup melted butter

Mix streusel ingredients all together in a bowl.  Sprinkle over muffin batter.

Bake at 400 degrees for 20-25 minutes.


NOTE:  For best results double your muffin pans together.

This way your muffin bottoms do not become overdone.
